Feb. 16th, 2011 09:27 amBen's game got rescheduled to thursday, so I made the spinach ragu last night. I am annoyed with recipes that say they only take 30 minutes and neglect to mention that preparation is another 30 minutes. (Or 60 if you are using an electric stove top and need to boil water.)
We ended up not eating until 8:30. Luckily I had discount valentine's day chocolate to keep me going.
The ragu was good, but not great. The tomatoes were a little overpowering. The spinach was interesting because it was only lightly cooked so it tasted cooked but had a little bit of crunch to it. I think if I ever made it again, I'd replace some of the tomato puree with some diced tomatoes and use a bit more spinach.
I've been trying to be really good about leftovers, so every night I take all the leftovers from dinner and pack them up in single serving tupperware containers. And then I can take them to work with me, or ben can grab one as a snack, or we can eat them for dinner on a lazy night. Nothing sits out on the counter and goes bad overnight.
