Jun. 17th, 2006 03:07 pmWhen I was little my mother was always yelling at me to eat more meat. She said that if I didn't eat lots of meat, my arteries would lose their elasticity and harden up. It never made much sense to me, so I ignored her.

New research suggests one reason vegetables may be so good for us – a study in mice found that a mixture of five common vegetables reduced hardening of the arteries by 38 percent compared to animals eating a non-vegetable diet.
